Chickpea Salad

Yummy Chickpea Salad - healthy & easy to make!

1 15-oz can chickpeas, drained and rinsed
4 plum tomatoes, thickly sliced
1 small red onion, sliced into half moons
3/4 cup fresh flat-leaf parsley leaves, roughly chopped
3/4 cup mint leaves, chopped
2 teaspoons red wine vinegar
1 clove garlic, crushed
3 tablespoons olive oil
3 tablespoons fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper

Combine all ingredients in a bowl.  Enjoy!
Makes 4 servings

Alternate versions: try white beans instead of chickpeas. You can also try sauteed onion and garlic.
