Sucker for Paad Thai // Day 3: Elimination Diet

DAY: 3
LBS TO GOAL: 1.4

Yep, only 1.4 lbs to go!

I didn't eat breakfast til 10am. who knows why... but Green Smoothe II did the trick! I'm loving the spinach, avocado, mango, pineapple, almond milk mix. Nice and fluffy, a little bit sweet and easy to drink down.

Lunch, well, I didn't do so well. We had a lunch meeting today - and they brought in the sweetest smelling Paad Thai which I'm already a huge sucker for. Rice noodles are in the elimination diet, right? Maybe, but at this moment I didn't care and was just focusing on getting that gorgeous food into my mouth. My mom once said, "you have no willpower" when I ate a Pillsbury croissant during my visit to see them last September. Boy is she right when it comes to food. I had a helping of Paad Thai the size of my palm and was full. I'm sure my stomach shrunk.

I cooked Ernie dinner... I googled "quinoa recipes" and came across this curry dish so I had to try it! There were a few things I needed from Jewel so I made a quick stop to complete the recipe. Well, I would post the recipe but it wasn't really good. It was consumable, but not something I'd recommend to you. I also made lemon chicken and cabbage. I tried to cook the cabbage like my mom and it was a failed attempt. Needless to say, I can't cook like moma!
